4 Years as a Raw Vegan

I just celebrated 4 years eating nothing but fruit, vegetables, nuts, seeds, herbs spices... and a few other things...

September 12, 2014 was a pivotal moment in my life. I chose to become a raw vegan. I knew of this lifestyle since early 2004 when I was give the book "The Mucusless Diet Healing System" by Professor Arnold Ehret. I had read pieces of it, and the idea of eating fresh fruit and mucusless foods was intriguing and resonating.

When I started this lifestyle I had no idea that I would be where I am today. So much has changed for me and I am excited for life.

4 years is a long time...

When I fist started, with the first salad, I thought to myself, "Imagine being raw for a whole year!"

That was a long time for me in the beginning. I had tried to be a raw vegan for the ten years before I actually was and could never stick to something for more than a few weeks. The longest I was ever eating this way was about 2 months, but I was eating really high fat and not enough fresh produce. I was also restricting calories because I wanted to lose weight and every time I would try, it would end unsustainably with, "well I guess this lifestyle is not for me. I'm always hungry, tired and even though I feel better because I am not eating junk food and drinking coffee, I still don't feel my best."

It wasn't until I tried the low-fat style of raw veganism and increasing my daily calories that I was finally able to stick to the lifestyle. I was eating enough, getting a lot of great variety and not suffering from sugar crashes anymore like I had used to. I remember re-reading my old raw journals where I documented my daily meals and realized that because I was eating so high fat, it was interfering with insulin. Every time I would eat some berries or fruit I would get super tired after an hour or so and blame the fruit. One day, after eating handfuls of nuts for a mid morning snack, I had a few cups of berries and suddenly I was lethargic and tired. I wrote on that day, "tomorrow don't eat so many berries because the sugar crash is not fun...." little did I know, it was really the fat that was to blame. Not the innocent sweet delicious berries!

Once I found my way, I changed. And I changed in more ways than I can describe. After about 4-5 months, my acne went away. My mood improved. I was finally happy with who I was. After about 7 months my hormones were so balanced and my cycle was on point. At the 14 month mark, I reached 117lbs, making it a rough total of 70 lbs lost.

Then things got a little..... interesting.

I started writing e-books.

I was going full force with my YouTube channel.

My ex and I split up after being together for 12 years.

I moved out on my own.

I travelled to Costa Rica to meet my good friend Jack from Raw Tropical Living.

I got into another relationship shortly after my trip, that ended about a year ago due to many reasons but a major one happened to be about our conflicting lifestyle habits.

I flew to Portland.

I met the love of my life, Nathan Maris of @rawnattyn8, who changed his life by going raw vegan after buying my 30 Day Meal Plan. He met Jack at The Woodstock Fruit Festival in 2017 where he told him all about his own journey. Jack thought it would be a great idea for me to interview Nathan for my YouTube Channel, so I did. The rest is history!

Now my life is on a completely different road. Because I took a chance on myself and changed my lifestyle, I am now living my own little dream life and feeling extremely fulfilled. I am helping hundreds of lovely souls find self love by adopting a vegan diet. I am saving animals by inspiring others not to eat them or their by-products. I am helping to save our Earth, which is dying at our hands. I am helping myself by remaining as healthy as I can be. I am helping to motivate, create and spread the message of compassionate eating.

I know the next 4 years are going to be amazing!

I got engaged at the Woodstock Fruit Festival.

We have filed for a fiance Visa - so I can move to the United States to be with my love.

We started a raw vegan lunch salad catering company called La Bella Fresca, offering delivery to healthcare staff at local hospital buildings in Rogue River and Medford, Oregon.

I'm currently writing my fourth recipe book and have plans for so many more!

The future is bright.

The future is mine to create.

As for health, I try not to think of where I would be if I didn't make the change 4 years ago. When you start something like this, 4 years seems like an eternity. When you are here though, it seems like just yesterday. My dad told me once, "The days drag on, but the years go by fast," and this is so true. Take it one day at a time. TODAY you are raw vegan. TODAY you choose to exercise. TODAY you choose healthy and hydrating foods. Suddenly it's been 4 years and you are celebrating with more delicious healthy meals, planning and looking forward to the next 40+.
