Need a quick idea to top your salad with? Try this salsa!
One of my favourite dressings just so happens to be salsa! You can use it for really any salad, to use on tacos, or just to enjoy as is. I have been knows to eat salsa right out of the jar.
Pro Tip: Get up a little earlier and make salsa in a large mason jar or Tupperware before you go to work. Shake it up and allow the salsa to marinate. Take chopped lettuce and veggies in a container to work and by the time lunch has arrived, you can add some delicious sweet salsa to your bowl of veggies. A perfectly simple hydrating lunch that will help keep you awake for the rest of the day!
Simple and easy to make, you can jar these up for a few days in the fridge. Also a great option to take to potlucks and parties.
Strawberry Mango Salsa
Prep time: 15 minutes
Gadgets needed: Food processor or simply a knife and cutting board
2 mangos of your choice
2 cups of cherry tomatoes
1/2 red onion
1/4 cup cilantro
1 tbsp lemon juice
1 clove garlic
1/4 tsp cumin powder
1/4 tsp smoked paprika
1/4 tsp chili powder
• If you are using a food processor, add the garlic and jalapeno first and puree these ingredients with the lemon juice and spices. Add the mango, strawberries, red onion, and cherry tomatoes and chop until desired consistency, trying not to turn it into puree unless you enjoy it like that. It should be slightly chunky. Add cilantro and pulse a few times to lightly chop and release flavours. Add salsa to jar and store in the fridge.
• If you are not using a food processor, finely dice the mangoes, strawberries and cherry tomatoes and place in a large mason jar. These should be chopped to your desired size. Mince the red onion, jalapeno, garlic and cilantro. Add these to the mason jar. Squeeze about half of a lemon into the salsa. Add the spices. Top with a lid and shake the salsa in the jar. Store in the fridge.
